“Once in a lifetime” is the philosophy behind Sushi Kokoro. According to head chef and owner Michimasa Nakamura, every sushi experience is unique. The handmade shape of each nigiri-zushi, every new taste and texture, every connection with a customer—all are heavily laden with potential, and yet are over in an instant.
The fleeting nature of the dining experience led Chef Nakamura to create his trademarked ikusei-sushi (or “nurtured sushi”), in which the fish is aged in a controlled environment for up to a week, depending on the variety.
