Yamagata San-Dan-Delo serves Italian cuisine that’s rooted in Japan, drawing from the abundant mountain vegetables of Yamagata prefecture and the seafood of the Shonai region along the Sea of Japan.
Under the leadership of chef Kazunori Akita, this Italian restaurant in Ginza aims to present an “evolution of cuisine” that merges the spirit of Italy’s regional cuisine with Yamagata’s rich food culture. Having trained in northern Italy, the chef embraces the area’s dishes and techniques.
Special focus is placed on seasonality; at Yamagata San-Dan-Delo, guests can taste the four seasons of the prefecture. The dishes feature home-grown rice, a specialty crop in Yamagata that’s considered a local “soul food.”
At lunchtime, Yamagata San-Dan-Delo offers a laid back atmosphere, while the dinnertime menu and ambiance are fitting for special occasions like anniversaries and birthdays.
